ocean want to do night photography. I need the weather to see the longest coastline?

I like going to a nice dark area for night photography from San Deigo and Los Angeles. But sometimes when I go out at night a fog over the ocean keeps me from getting a good shot. I have over $ 4,000 new equipment including a tripod canon, external timers, leveling bubble and the Canon L lenses. I just need help finding it weather conditions I need to get the ball higher above the horizon, so I can see the stars the whole way.

Fog is caused by a couple of things that comes to mind: 1. Humid air cooling to a temperature that is below the dew point. 2. The wind and waves. On the water, I think dew point must be very close to the surface water temperature. So you want a time when the air is warm and the water is cold. And like the wind to a minimum.
