I need help with some adjustments identified in this …. camera as the shutter priority and priority Opening.

Read and study the Owner's Manual. Shutter Priority, simply means that you select a shutter speed and camera select the aperture (f-stop). Use when your focus is on stopping the action. Aperture Priority means simply select the aperture (diaphragm) and the camera selects shutter speed. Use when your interest is in the depth of field. The camera must notify you when the shutter speed is too slow for safe retention.

Do you know if there is a way to change the exposure time of my camera Canon Powershot Pro1? Be which is a P & S, but I thought there might be a way. Oh, and how I can use the bracketing function of the device. Thank you!

Bracketing, you should check your owner's manual. Normally point and shoot cameras do not offer manual control over things like shutter speed.
